Spinach & Eggs Cup Cakes

Ok, let me start by stating that I can not take the credit for the above recipe. I saw a picture of it somewhere online (I think it might have been Pinterest) and I loved the idea. This is a great way to make a healthy protein-rich meal / snack with few ingredients. You will need:

  • 12 eggs
  • Olive oil
  • Fresh Spinach
  • Fresh Scallions
  • Salt & Pepper
  • Cupcake pan
Directions:
  • Cut up the spinach and scallions in a large bowl
  • Crack eggs and mix in the bowl with spinach and scallions
  • Add salt and paper to taste
  • Whisk away
  • Brush the cupcake pan with olive oil to prevent the eggs from sticking to the pan
  • Pour mixture into cupcake pan (do not fill up the cups)

  • Bake in the oven at 375 degrees for 15 minutes (You can go to 20 minutes but it will be drier)
