Simple Healthy Spinach Salad Recipe
Great healthy salad and super easy to make!

Ingredients:
  • 4 cups fresh spinach, cut up
  • 2 medium cucumbers, diced
  • 2 medium tomatoes, diced
  • 1 medium sweet pepper, diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 can (15.5 oz.) chickpeas, drained and rinsed well
  • 1 can (7 oz.) mushrooms, drained and rinsed well
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • dash of salt and pepper (to taste)

Directions:
  • Mix Vegetables olives, chickpeas, and mushrooms
  • Add olive oil, balsamic vinegar, salt and pepper
  • Toss all together for a light and delicious salad!
