Jodi's Sweet Potato Chips

As promised, here is my wife's awesome and totally delicious sweet potato chips recipe!

Ingredients:

• 3 Sweet potatoes
• 2 tbsp olive oil
• 2 tbsp Italian Seasoning
• 1/2 tsp salt
• Cooking spray

Directions:

• Wash potatoes and slice thin
• Let sliced potato set in cold water for at least 10 minutes
• Pad dry with a paper towel and let air dry for another 10 minutes
• In a large bowl add all ingredients and mix well to get all potato slices coated evenly
• Preheat oven to 350 degrees
• Line baking sheet with aluminum sheet
• Lightly spray cooking sheet with cooking spray
• Line the potato slices flat but not on top of each other
• Bake for 20 minutes
• Flip potato slices and back for another 15-20 minutes
• Let air dry for 5-10 minute to get cool and crispy
• Enjoy!
